One fascinating detail about the mezcal production process is that it’s completely artisanal—meaning that it’s all hand made. Machines are rarely used except in larger commercial operations. The agave is cooked with fire and wood, pressed (often by a mule-driven tools called a tahona) and naturally fermented.

What’s the best time of the year to schedule your own mezcal tasting excursion? Just about any time works, since the distilleries operate year-round. Some would recommend the dry season that runs from November through April and we tend to agree with that.

Not only is that period our most pleasant weather, with warm sunny days perfect for outdoor activities like visiting distilleries, but it is also peak harvest season. Visiting during that time period ensures you get to see the whole process, from harvest through production.

It’s also when many of the popular local festivals and events take place. So you can have your
memory-making exploration of mezcal along with your immersion into traditional Mexican culture.
